    Interview: Lisa Toomey, Hotel Manager at Ashford Castle

    estled in the heart of Co. Mayo, Ashford Castle is one of Ireland’s most iconic luxury hotels, renowned for its rich history, stunning surroundings, and world-class hospitality.

    To gain insight into what makes this legendary property so special, we caught up with Lisa Toomey, the Hotel Manager, to discuss the magic behind Ashford Castle, its commitment to excellence, and what guests can expect from a stay at this extraordinary destination.

    Originally from Bunratty, Co. Clare, Lisa began her career at Ashford Castle in 2017 as Director of Food and Beverage, before being promoted to Director of Operations in 2019. She was appointed Hotel Manager in 2023. Lisa is now responsible for the day-to-day operation of Ashford Castle, leading and working closely with all department heads to consistently uphold service excellence in line with Ashford Castle’s prestigious Forbes Five-Star rating.

    If you were to describe Ashford Castle in three words, what would they be?

    Timeless, Legendary, Welcoming. At its core, Ashford Castle offers more than just its breathtaking beauty and rich history – it’s the people who bring it all to life. Our dedicated team ensures that every guest feels like part of the castle’s story, creating experiences that are as warm and personal as they are luxurious.

     

    What makes this hotel truly unique compared to others?

    Ashford Castle is a perfect blend of history, luxury, and heartfelt Irish hospitality. Dating back to 1228, it has hosted royalty, dignitaries, and Hollywood legends, yet it remains deeply connected to its surroundings and traditions. The meticulous restoration has ensured that every detail, from the grandeur of its interiors to the personalised service, offers an experience that is both authentic and extraordinary, but what really sets the Castle apart is our team. We have team members celebrating up to 50 years’ service with the Castle. The team has such a depth of character, with stories to tell that build a real connection with guests.

    Are there any historical stories about Ashford Castle that you love sharing?

    One fascinating connection is to the renowned writer and poet Oscar Wilde. His father, Sir William Wilde, was a celebrated eye and ear surgeon who had a special connection with the west of Ireland and owned property near Lough Corrib. It’s believed that young Oscar spent time exploring the area, drawing inspiration from the landscape that later influenced his writing. He was a regular fixture when the Guinnesses were entertaining and would often be here for tea. Walking through the estate today, you can almost imagine the same natural beauty sparking creative minds throughout the centuries.

     

    What signature experiences can guests look forward to?

    Guests can indulge in a range of bespoke experiences, from falconry at Ireland’s oldest school to private boat trips on Lough Corrib. The equestrian centre, clay shooting, and Ireland’s only Forbes five-star spa provide something for every interest. Our dining experiences – from the elegant George V Restaurant to Cullen’s at the Cottage – are steeped in history and excellence.

    Which room or suite is the most popular, and what makes it so special?

    The Reagan Presidential Suite is one of the most sought-after accommodations, named after former U.S. President Ronald Reagan, who stayed at Ashford Castle in 1984. Overlooking Lough Corrib, the suite exudes historical grandeur with a four-poster bed, original fireplace, and handcrafted details that transport guests to another era.


    How do you create a personalised experience for every guest staying at Ashford Castle?

    Personalisation is at the heart of what we do. Our team ensures that each guest’s stay is tailored to their preferences – whether it’s a favourite wine waiting in their room, a curated itinerary of experiences, or even a surprise moment based on a past visit. It’s these thoughtful touches that make a stay at Ashford Castle truly special.

    Do you have a personal favourite spot or experience within the castle or its grounds?

    One of my favourite moments is watching the sunset over Lough Corrib from the terrace. The light changes beautifully over the water, creating a peaceful and almost magical atmosphere. I also love the charm of the Walled Garden, a secluded spot that feels like stepping into another world.

     

    What is a hidden gem or secret about the property most guests don’t know?

    Many guests don’t realise that beneath the castle are secret tunnels once used by staff to move discreetly through the property. These are now the castle’s wine cellar, where our sommelier hosts private tastings in an intimate and atmospheric setting.

    What do you hope every guest takes away from their time at Ashford Castle?

    A deep connection – to history, to nature, and to the warmth of true Irish hospitality. Whether it’s a moment of reflection by the lake, an exhilarating outdoor adventure, or simply the joy of being pampered in an extraordinary setting, we want every guest to leave with cherished memories.

     

    What inspired you to pursue a career in hospitality, and what do you find most rewarding about it?

    I’ve always been passionate about creating exceptional experiences and making people feel welcome. Hospitality allows me to bring that passion to life every day. The most rewarding part is seeing the joy on a guest’s face when they experience something truly special – knowing that our team played a role in making it happen.

    What is your favourite part of managing such a renowned property?

    The people. Ashford Castle has an incredible team who are deeply passionate about what they do. Being part of a place with such a rich history and seeing it continue to evolve while maintaining its legacy is a privilege, I always say, we are just custodians for this part of its history, and that is a privilege.

     

    What is one piece of advice you always share with your team?

    Every interaction matters. The smallest details – whether it’s a warm welcome, remembering a guest’s preferences, or going the extra mile – are what turn a stay into an unforgettable experience. True hospitality is about creating moments that guests will cherish long after they depart.
